Banana Chocolate Chip Muffins
I make these almost weekly ... they are devoured within about 24 hours.
Banana Chocolate Chip Muffins
400 degrees 20-25 minutes (makes 12 large muffins)
Ingredients:
1 cup of white sugar (I usually put in 3/4 cup)
1/2 cup vegetable oil
2 eggs
3 bananas (really ripe ones work great)
3 tablespoons of sourcream (I make that a heaping spoon)
1 teaspoon of baking soda
2 cups flour (about 2/3 cup ground flax and the rest whole wheat flour - not white flour it makes it too dry and yucky)
1 bag of MILK CHOCOLATE chips
Instructions:
Beat sugar, oil, eggs and bananas.
Dissolve soda in sour cream (give it about 3 minutes and the sour cream gets all fluffy). Slowly add sour cream to mixture and mix on low. Add flour, mix. Add chocolate chips. Enjoy!
